How to Make Black Eyed Peas
Serves 4-6
Ingredients:
- 500 gr fresh black-eyed peas
- 3 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic
- 2 peppers, chopped
- 1 cup hot water
- 2 tomatoes, grated
- 1 teaspoon salt
- 1 teaspoon sugar
Method:
- Wash the beans and cut into 3 pieces.
- Heat oil in a large pan. Add onion and peppers and fry 2-3 minutes. Add garlic and continue cooking until onion is soft.
- Add the beans and grated tomatoes.
- Add salt and sugar. Cover with the hot water. Cook over low heat until beans are soft.
